Distillation in Burgundy is an ancient tradition that dates back to the Middle Ages. As early as the 14th century, stills were used to produce eaux-de-vie from grape marc. In 1581, a royal edict officially authorized the distillation of marc in Burgundy, confirming its importance in the region. In the 17th century, bouilleurs de cru multiplied, perpetuating a know-how that was passed down from generation to generation.

Born in 1862 in Romanèche-Thorins, Vincent Jacoulot grew up between the inn and his father's cooperage.
