Aged in oak barrels for at least 7 years and up to more than 30 years, in our cellars, our eaux-de-vie testify to our desire to perpetuate "the Soul of the House" and our quest for Excellence.

The Quintessence of Burgundy Grapes

A century-old and emblematic creation of Burgundy, Marc de Bourgogne is a controlled appellation of origin produced through the distillation of solid materials (skins, seeds) extracted during the pressing of Chardonnay, Gamay, or Pinot Noir grapes.

Our spirits are distilled using a multi-stage discontinuous distillation process with potstills consisting of distillation vats and concentration columns.

At Jacoulot, we have chosen to use exclusively Pinot Noir grapes, carefully destemmed: the stems are removed before vinification to ensure finesse and purity and to remove astringency.

  • Marc de Bourgogne 7 years old: The emblematic and historic spirit of Maison Jacoulot with mentholated notes and a finish of dried fruits and rum-raisin ice cream.
  • Marc de Bourgogne 13 years old: The nose: aromas of red bell pepper and citrus, dried fruits. The mouth: citrus, dried fruits, honeyed and roasted almonds notes — a pure delight!
  • Marc de Bourgogne 20 years old: The nose: straw, rum-raisin ice cream and mentholated notes. The mouth: a rich, gourmet palate with honeyed and woody notes. A floral finish on the palate.
  • Marc de Bourgogne 30 years old: A 'toffee' nose with honeyed notes. Licorice notes on the palate, rum raisin and mentholated aromas.

Very rich aromas

This method of destemming grape seeds gives our Marcs de Bourgogne a unique finesse and aromatic palette. The raw material, rich in aromas, is then distilled in a pot still, a meticulous process that releases the unique aromatic compounds of the Marc.

After distillation, the alcohol is aged over the years in barrels, casks or muids, all made from French oak, allowing a complex and elegant development of flavors.

After years of patience, the Marcs de Bourgogne are blended thanks to the expertise of our Cellar Master to give birth to the unique style of Maison Jacoulot.

Fine de Bourgogne Jacoulot

The elegance of a prestigious Burgundy spirit

In the tradition of prestigious Cognacs and Armagnacs, Fine de Bourgogne is a brandy obtained by distilling wines loaded with Fine lees from racking.

Once distilled, our Fine de Bourgogne ages for many years in French oak barrels at the heart of our cellars located in Romanèche-Thorins.

A minimum maturity of 7 years in oak barrels is required for Jacoulot Fines de Bourgogne.

The "Authentic" range is aimed at great connoisseurs and enthusiasts:

  • Fine de Bourgogne 7 years old: a timeless reference. Complex and balanced, it reveals its bitter almond aromas with spicy and liquorice notes.
  • Fine de Bourgogne 13 years old: a very honeyed nose, grilled almonds, nougatine notes — gourmet and tasty, simply IRRESISTIBLE!
  • Fine de Bourgogne 20 years old: the mouth, herbal notes, very elegant, with vanilla notes on the finish; opulent and round, it envelops the palate with softness.
  • Fine de Bourgogne 30 years old: the mouth, licorice and buttery notes, with nougat and vanilla aromas on the palate — complex and caramelized, the ULTIMATE expression of our expertise.
